Crisp Chicken Envelopes



Hello Everyone!

I am back from a small family vacation, due to which I couldn't post my new recipe.

Ingredients for Crisp Chicken Envelopes-


  • Chicken - 1 bowl (minced)
  • Onion - 1/2
  • Garlic -  4 to 5 cloves
  • Ginger - 1/2 inch
  • Green chilly - 2
  • Capsicum - 1/4th piece
  • Cumin powder - 1/2 tsp
  • Flour/Maida - 2 tbsp
  • Oil (for frying)
  • Bread crumbs
  • Salt, as per taste

For the outer envelope/cover -

  • White flour/Maida - 2 cup
  • Oil- 1 tbl sp
  • Water, as required for kneading
  • Salt, as per taste

Lets cook it up -


  • Follow first four steps of my previous recipe - Chicken Fingers. You can visit the page - http://sonalisdeliciouscooking.blogspot.in/2016/05/chicken-fingers.html
  • Half fry the chicken fingers and keep it aside.
  • Take the dough, and roll it into thin circular shaped wraps. Then, cut it into square shapes wraps.
  • Use a fork to poke the flat square shaped wraps. This is done to make it crispy when fried.
  • Keep a chicken finger between the square shaped wrap and bring the two opposite edges in the centre. (As shown in picture)
  • Once its done with all the fingers, shallow fry it.





                                 Enjoy the delicious, full of crispness, chicken delight!

Chicken Fingers




Hello my friends, today I bought chicken and so we are gonna cook few dishes with yummy chicken. You know, I just love chicken. Being a Bong, I am not so fond of fish, but chicken is just all time fav!

So, that's enough about my likings. Tell me about yours? You can leave comments guys and do tell me what you like, so that I can cook something for you also. :)

Ok! Now let's concentrate on cooking. ;)



Ingredients for Chicken Fingers -


  • Chicken - 1 bowl (minced)
  • Onion - 1/2
  • Garlic -  4 to 5 cloves
  • Ginger - 1/2 inch
  • Green chilly - 2
  • Capsicum - 1/4th piece
  • Cumin powder - 1/2 tsp
  • Flour/Maida - 2 tbsp
  • Oil (for frying)
  • Bread crumbs
  • Salt, as per taste

Lets cook it up -


  • First of all, we ll make a paste of onion, garlic, ginger, green chilly, and capsicum.
  • Marinate chicken with this paste, cumin powder and salt for at least 30 minutes.
  • After marination, mix flour to the chicken so that it easily gets bind. If required put 1 tbsp of semolina (it gives a crispness).
  • Then take small portions of chicken and shape it out into fingers and roll it into bread crumbs.
  • Once its done, shallow fry it at a low flame, so that chicken gets cooked well.
  • Serve it with sauce or garlic dip.

Paneer Dumplings


Today special is Paneer Dumplings :)




Ingredients for Paneer Dumplings -


For Dumpling filling -

  • Paneer or Cottage cheese - 1 cup (crumbled)
  • Capsicum - 1 (finely chopped)
  • Onion - 1 (finely chopped)
  • Garlic - 4 cloves (finely chopped)
  • Oil
  • Chilly powder - 1/2 tsp
  • Salt, as per taste

For Dumpling cover -
  • All purpose flour/maida - 1 cup
  • Oil - 1/2 tsp
  • Salt, as required
  • Water for kneading, as required

For Dip - 

  • Garlic - 7 to 8 cloves
  • Onion - 1/2
  • Tomato - 1/2
  • Coriander leaves
  • Chilly (Red or Green) - 4
  • Tomato sauce - 1tbsp
  • Oil - 2 - 3 tbsp
  • Salt, as per taste

Lets cook it up -


  • Lets start with preparing dip, grind all the ingredients of dip into paste.
  • Once its done, take a pan and 1 tbsp of oil to cook the paste.
  • If required you can add some water (1/2 cup) and cook for another 5 minutes.
  • Add some tomato sauce and mix it. And keep it aside.

  • For filling, take a pan and heat oil. Put garlic, onion and capsicum, and cook it.
  • Add the crumbled cottage cheese and cook it till it starts turning light brown.
  • Add chilly powder and salt, mix it. Once its done, turn off the flame.

  • For cover, knead the flour into dough.
  • Divide the dough into small parts and make small balls. Roll it into thin circle shape.
  • Try to get the edges thin.
  • Place the filling in the centre.
  • Start folding and forming the pleats one by one. towards the end, join the pleats in the centre.
  • Prepare all the dumplings like this.
  • Heat water in a steamer or in a pressure cooker. Let the water come to a boil.
  • In a greased steamer pan or in idli moulds, place the dumplings keeping space between them so that they don't touch each other. 
  • Steam dumplings for 5-6 minutes.
  • Don't overdo the steaming, as the dough becomes dense and dry.
  • The steaming time may vary upon the thickness of dumplings' cover.
  • Once the dumplings are done, it will not be sticky when touched and will look transparent.

     So lets have this super delicious treat at home with pleasant evenings!


Indian Cheesy Quesadilla



Hi Guys, Come lets have some delicious Indian style Quesadilla...!


Ingredients for Cheesy Quesadilla -


  • Cheese
  • Garlic - 4 to 5 cloves (chopped)
  • Onion - 1 or 2 (finely sliced)
  • Capsicum - 1 (finely chopped)
  • Chilly powder - 1/2 tsp
  • Tomato sauce
  • Oil - 1 tbsp
  • Salt, as per taste


For Wrap/Plain Paratha -

  • Wheat Flour - 1 cup
  • Water 
  • Oil - 2 tbsp
  • Salt, as per taste

Lets cook it up -

  • For wrap, make a dough of wheat flour and roll it into flat circular shape wraps. Then, take a pan and cook it from both side. You can also use leftover Roti/Plain paratha (Indian bread).
  • On the other hand, take another pan and heat oil. Put garlic followed by onions and capsicum. Sprinkle salt and chilly powder. Cook it for 5 minutes, till veggies are done.
  • Take the wrap, and on one side spread sauce.
  • Fold the wrap and put the cooked veggies. Put grated cheese or cheese slice.
  • Wrap it. 
  • Take a pan, heat oil and fry the wrap from both side till cheese melts and the wrap gets crispy.

Garlic & Cheesy Delight!


Hi Guys, I am back with quick snack recipe for you.. I made it yesterday and it was simply yummy as a light snack at evening. Do try it.



Ingredients for Garlic & Cheesy Delight Recipe -

  • Bread - 2 Slice
  • Garlic - 2 or 3 cloves
  • Onion - 1/2 pc ( finely sliced)
  • Cheese - Grated / Slice
  • Butter 
  • Tomato sauce
  • Salt, as per taste

Lets Cook it Up - 
  • Take a pan, put 1 tbsp of butter. Once it melts, fry garlic and onions for 2 minutes. Sprinkle salt, as per taste.
  • Take bread and spread sauce on one side of each slice. Spread the prepared garlic and onions. Put grated cheese or cheese slice and make a sandwich.
  • Butter the bread slices from outer side and toast it in pan (you can also use oil instead of butter) at low flame, so that cheese melts. You can also cover the pan, to melt cheese quickly. 
You gonna love the crispy delight.. :)

Lasagne



Hi Guys, today I am going to share my style recipe of mouth watering Lasagne and believe me it was really very delicious. My friends and family keep asking me to make some more. :)

So, lets begin -

Ingredients for Lasagne Recipe -

For Lasagne layer -

  • Cottage cheese (Paneer) - 250 gms
  • Capsicum - 1 (chopped) 
  • Tomato - 2 (finely chopped)
  • Onion - 2 (finely sliced)
  • Ginger - 1/2 inch (finely chopped)
  • Garlic - 3 cloves (finely chopped)
  • Mushrooms - 200 gms ( chopped)
  • Cabbage - 1/4th portion (finely chopped)
  • Tomato sauce - 3 to 4 tbsp
  • Oil - 4 tbsp
  • Black pepper powder - 1/2 tsp
  • Red chilly powder - less than 1/4 tsp
  • Salt - as per taste
  • Grated cheese
  • Fish / Chicken - 200 gms (sliced)

For White Sauce :

  • Butter - 2 tbsp
  • Flour (Maida) - 1 tbsp
  • Cheese - 2tbsp
  • Milk - 1 cup
  • Salt - as per taste
  • Black Pepper powder - 1/2 tsp

For Lasagne Sheets :

  • Flour (Maida) - 2 Cups
  • Eggs - 2
  • Salt - 1/2 tsp
  • Water

Preparation of Lasagne Sheets -

  • Take 2 cups of flour, put some salt and sift it in a bowl.
  • Add 2 eggs and mix it. Put some water, as required and make a soft dough.
  • Cover the dough with a cloth and keep it aside.
  • After a while, make thin sheets with a thin roller.
  • Cut it into strips and boil it in salt water ( as you boil macaroni/pasta).

Preparation of White Sauce -

  • Take a pan and put 2 tbsp of butter. Once it melts, add flour and mix it.
  • After 1 minute, add milk, salt and black pepper powder. Stir it for a while.
  • Once it starts boiling and grated cheese and mix it properly. 
  • Now, turn off the flame once sauce is thick.

Preparation of Paneer - Veggies -



  • Take a pan and heat 2 tbsp of oil. Fry the small pieces of cottage cheese. 
  • Take out the fried cottage cheese and keep it aside.
  • Add some more oil and put chopped garlic and ginger.
  • Add onions and stir it until light brown. Add cabbage and capsicum and cook it. 
  • Add the mushrooms and lastly tomato and cook it.
  • Add the fried cottage cheese and mix it.
  • Put salt as per taste, red chilly powder, tomato sauce, black pepper powder and mix it properly.
  • Cook it for 5 minutes and its done.











Preparation of Fish/Chicken -

  • Though this time I used fish, but you can choose fish or chicken.
  • Cut fish/ chicken in thin strips and marinate it with ginger garlic paste, salt and chilly powder.
  • Fry the marinated fish/chicken in a pan.

Final Steps To Cook Our Lasagne -

  1. Take a Borosil Bake-ware Bowl and start layering.
  2. At first, make a layer with lasagne sheets.
  3. Then put a layer of the paneer - veggies and give topping of white sauce.
  4. Again, put a layer of lasagne sheets, with fish/chicken fry and topping of white sauce.
  5. Repeat step 3 again. You can make 3-4 layers; as many as layer you want.
  6. Once done, in the final layer, put only a layer of veggies and cover it with grated cheese.
  7. Pre-heat the oven. And bake your lasagne for 25 minutes or until it turns golden in colour.
                                Enjoy your delicious Lasagne and share it with your family :)
