Nan Khatai - Baked in Cooker


Nan Khatai is another name of Butter Cookies made with Refined flour, Semolina and Gram flour.



Lets start with the recipe steps:

Ingredients for Nan Khatai:

  • Butter - 100 to 110 gms
  • Refined flour (Maida) - 1 cup
  • Gram flour (Besan) - 1/2 cup
  • Semolina (Suji) - 2 tbsp
  • Sugar, powdered - 3/4 cup
  • Cardamom powder (Elaichi) - 1 tsp
  • Cinnamon powder (Dal chini) - 1/2 tsp
  • Baking powder - 1/4 tsp
  • Almonds/Cashew nuts/ Pistachios - sliced


Let's follow the steps:


  • Sift flour and baking powder in a bowl. Add gram flour and semolina.
  • Sprinkle cardamom and cinnamon powder.
  • Now, add sugar and mix all the dry ingredients well.
  • Next melt the butter and once slightly cooled pour it into the dry mixture.
  • Knead a dough.
  • Don't expect a dough similar to making breads.
  • Make small balls (pedas) of equal quantity. Do not worry if you find cracks in the sides.
  • Slightly press on the top of the balls and place dry fruits.
  • Now take a cooker and remove the whistle. Put 1/2 cup of salt in the cooker.
  • Place a stand in the bottom of the cooker and pre-heat the cooker for 5 minutes.
  • Keep the tray/bowl with small pedas/balls(Nan Khatais) on top of the stand.
  • Bake it for 20 minutes. You can check in between. 
  • Once the Nan Khatais are golden brown, turn off the flame.
  • Alternative to bake Nan Khataies - Convection mode in microwave at 180°C for 20 to 25 minutes till golden brown.

Note: If you are using unsalted butter, then add 1/2 tsp of salt.
           In this recipe Amul butter was used which is salted.

Banana Leaf Sushi Rolls


Sushi Rolls with flavoured rice, chunks of chicken, goodness of greens...

And the fresh flavour of banana leaf.

Lets start with the tempting rolls..




Ingredients for Sushi Rolls:

There are 4 main components for this dish -

  1. Steamed rice
  2. Flavoured rice
  3. Greens - Spinach
  4. Chicken chunks

1.For Steamed Rice - 
  • Rice - 1 cup
  • Salt, as per taste
  • Water - 2 cup
  • Cook the rice in cooker.
  • Rice should be soft.
  • Mix 2 tsp of butter to rice.
2. For Flavoured Rice -

  • Rice - 1 cup
  • Star anise - 1
  • Cinnamon stick - 1/2 inch
  • Capsicum - 1/4 cup
  • Onion - 1/4 cup, grated
  • Green Chilli
  • Garlic - 2 cloves
  • Salt, as per taste
  • Water - 2 cup
  • Butter - 2 tsp
  • Colour - Orange
  • Heat butter in cooker. Add cinnamon stick and star anise.
  • Add garlic, green chilli, capsicum and onion. Fry till light brown.
  • Add rice and few drops of colour.
  • Add water and cook.
3. For Sauteed Spinach-

  • Onions - 1, finely sliced
  • Spinach - 1 cup, Sliced
  • Garlic - 3 cloves, chopped
  • Ginger - 1/4 inch, juliennes
  • Butter - 2 tsp
  • Heat butter in a pan.
  • Add ginger and garlic. Fry till golden.
  • Add onions, fry till soft.
  • Now add the spinach and cook till soft.
  • Add salt, chilli powder and black pepper powder.
  • Sprinkle a pinch of sugar.
  • Cook for 5 minutes.
4. For Chicken chunks - 
  • Chicken - 1/2 cup, sliced
  • Green chilli and Onion - paste
  • Ginger - paste
  • Garlic - paste
  • Oil
  • Lemon juice - 1 tsp
  • Salt, as per taste
  • Marinate the chicken with all the ingredients for at least 30 minutes.
  • Heat oil in a pan and saute the marinated chicken till soft.
Final steps - 
  • Take a banana leaf. Cut it into half or cut it into a square shape.
  • Put a layer of steamed rice. And press the rice to make a plain layer.
  • Now evenly put flavoured rice as 2nd layer and similarly put pressure to make a plain layer.
  • Put sauteed spinach and chicken chunks in the centre.
  • Start rolling the banana leaf. 
  • Take a thread and tie the roll.
  • In a cooker, add water and place the banana roll in a bowl.
  • Place it in the cooker.
  • Steam it till 5 minutes, so that the flavour of  banana leaf gets mixed with the rice.
  • Serve it hot.

Layers of Wonders



Layers of Wonders has surprises in every layer.

With left over rotis/flat breads, you can make a delicious dish for you kids or loved ones.

Ingredients for Layers of Wonders:


  • Roti/flat bread - 3
  • Baby corn -1/2 cup, chopped
  • Onions - 1 cup, finely sliced
  • Carrots - 1 cup, julienne
  • Tomato/Capsicum - 1/2 cup (Optional), chopped
  • Cauliflower - 1 cup, chopped
  • Cheese - 1.5 cup, grated
  • Garlic - 2 cloves, chopped
  • Chilli powder
  • Cumin powder - 1/2 tsp
  • Ketchup - 2 tsp
  • Salt, as per taste
  • Butter
For Cutlets:

  • Raw banana/ Potatoes - 1 cup
  • Fresh cottage cheese - 1/2 cup
  • Chilli powder
  • Cumin powder - 1/2 tsp
  • Onion - 1, finely chopped
  • Salt, as per taste

Let's follow the steps:


  • Take a pan, put some butter and add garlic, followed by onions.
  • Once the onions are soft and pink in colour, add the rest of the vegetables.
  • Sprinkle some salt, chilli powder and mix well. Fry the vegetables.
  • Lastly, add cumin powder and ketchup. Mix well.
  • Once the veggies are done, keep the veggies aside and let it cool.
For Cutlets:

  • Boil raw banana till soft.
  • Mash the raw banana and mix it will cottage cheese.
  • Add all the ingredients and make small balls. Press the balls in flat.
  • Shallow fry these cutlets in a pan.
  • Now take 3 fried rotis/flat breads. 
  • Start layering. First, take a roti/flat bread, and put fried veggies on it.
  • Put grated cheese on top of it.
  • Put another layer of roti/flat bread. Place the cutlets on it. (You can also put some sliced cucumber before placing the cutlets).
  • Now put another layer of roti/flat bread. Repeat it with veggies and grated cheese.
  • Now microwave it for 3 to 6 minutes till cheese gets melted.
  • Or you can place it in a pan and cover it with a lid. Keep the flame low.
  • After 5 minutes, cheese will start melting. 
  • Serve it hot to your loved ones..
