Baingan ka bharwa with peanuts is a must try dish. So let's start.
Ingredients for Baingan ka Bharwa:
- Small brinjals (baingan) - 6
- Peanuts - 1 bowl
- Onions - 1 bowl, chopped
- Ginger - chopped
- Aamchur powder - 1 tsp
- Chilli powder - 2 tsp
- Cumin powder - 2 tsp
- Roasted cumin seeds- crushed
- Turmeric powder - 1 tsp
- Coriander powder - 2 tsp
- Sugar - 2 tsp
- Salt, as per taste
- Oil
- Water
- Coriander leaves
Let's follow the steps:
- Wash the brinjals and cut it from the centre. Do not cut the brinjal into half.
- Roast peanuts in a flat pan till it turns brown. Let the peanuts cool down.
- Remove the skin of the peanuts and grind the peanuts roughly in a mixer.
- Heat oil in a hot pan. Add ginger, roasted cumin seeds and onions. Fry till onions turns soft.
- Add peanuts and all spices, salt and mix well. Add the sugar.
- Once bharwa is done, take it off the flame.
- Now stuff the brinjals with the peanut masala.
- Heat some oil in pan, put the stuffed brinjals and also put the remaining masala.
- Cook the brinjals. Add 1 cup of water and cook well till brinjals are soft and nicely done.
- Garnish it with coriander leaves.
- Serve hot with roti/rice.
