Chandrakala


HAPPY DIWALI!

Happy Diwali to all my loving friends!!


Diwali is a festival of lights, crackers, sweets, snacks and full of positivity and togetherness.
So here I am with a sweet recipe which you can easily cook and serve to all your guests.






Ingredients for Chandrakala:


  • Refined flour (maida) - 4 cups
  • Baking powder - 1/2 tsp
  • Salt, a pinch
  • Oil - 2 tbsp
  • Khoya - 1 cup
  • Ghee - 2 tbsp
  • Semolina (suji) - 1 cup
  • Powdered sugar - 1/2 cup
  • Sugar - 1 cup
  • Water - 2 cup


Let's follow the steps:



  • Take a deep bowl, sieve refined flour, baking powder and salt. Pour oil and mix well. Pour little amount of water and start kneading a tight dough.
  • Once done, cover the dough with a wet cloth and keep it aside.
  • Take a small amount of dough, divide it in equal small parts. And roll it in small size roti.
  • Put stuffing in the centre of the roti; fold it and bring the edges together.
  • Tightly press on the edges so that the stuffing is secured in the center.
  • Now make design on the edges. 
  • Heat oil in a pan, and deep fry.
  • Once all the chandrakalas are golden brown, take them out and dip them in sugar syrup.
  • Chandrakala is ready!!!

STUFFING:
  • How to make khoya- take 1/2 ltr milk, keep boiling the milk till it thickens. 
  • Add sugar - 4 tbsp and stir. Khoya is ready once milk gets thick and dry.
  • Take a pan, put ghee and lightly fry the semolina till light brown.
  • Now mix khoya, suji, and powdered sugar. Stuffing is ready.

SUGAR SYRUP:
  • Take 1 cup of sugar and 2 cup water.
  • Boil the mixture in a sauce pan.
  • After 10 minutes, take a small drop of the syrup on one finger, and press it to check if single string is formed.
  • Syrup is ready.

Instant Modak



Ganpati Bappa Morya!

Ahead of Ganesh Chaturthi made some quick and instant Modaks.

So let's start with my recipe.




Ingredients for Modak:

  • Milk Powder - 2 cups
  • Milk - 1 cup
  • Sugar, powdered - 3/4 cup
  • Cardamom powder - 1 tsp
  • Ghee - 3 tbsp
  • Dry fruits - chopped, filling
  • Coconut filling
  • Semolina - 1 cup

Let's follow the steps:
  • Take a non-stick pan, add 2 tbsp ghee. 
  • Pour milk and then milk powder. Mix well.
  • Keep the flame medium to low. Add sugar and keep stirring.
  • Cook well till it starts to form a soft dough.
  • Sprinkle cardamom powder and mix.
  • Now put mixture in a plate and let it cool down.
  • Add 1 tbsp ghee and fry semolina till light brown.
  • Put semolina in a separate plate.
  • Now take small amounts of the modak mixture, press with your fingers and put dry fruit/coconut filling in the centre and cover it.
  • (For coconut  filling, heat pan add jaggery and then grated coconut. Cook till it binds well ).
  • Make small balls and shape it like modaks. (Apply few drops of ghee in hands for easy making).
  • If you have modak moulds, then shape it with the help of moulds.
  • Wrap the modak in the fried semolina. It will give a good texture and taste.
  • Repeat the same process.

Kadhai Paneer



Restaurant style home-made Kadhai Paneer.

Main dish from my North Indian Thali!!



Ingredients for Kadhai Paneer:


  • Paneer (cottage cheese) - 200 gm, cubes
  • Capsicum - 1 bowl, cubes
  • Onion - 1/2 bowl, cubes
  • Tomato puree - 1 bowl
  • Onion paste - 1/2 bowl
  • Ginger-garlic - 3 tbsp, paste
  • Coriander seeds (Dhania) - 1 tbsp
  • Cumin seeds (jeera) - 1/2 tbsp
  • Fennel powder (saunf)- 1 tsp
  • Red chilli - 1
  • Cloves - 2 to 3
  • Green Cardamom seeds - 1
  • Bay leaf - 1/2
  • Black pepper - 4
  • Salt, as per taste
  • Water - 1 cup
  • Oil

Let's follow the steps:


  • Roast coriander seeds, cumin seeds and bay leaf. Now grind coriander seeds, cumin seeds, bay leaf, red chilli, black pepper, cardamom, cloves to a powder. This is the kadhai masala.
  • Shallow fry the paneer cubes and keep it aside.
  • Heat oil, fry onion cubes till soft. Add the capsicum and cook till soft. 
  • Take them out.
  • Now add ginger garlic paste and onion paste. Cook till it turns golden. Now add tomato puree and cook for 5 minutes.
  • Put turmeric powder, chilli powder and salt. Mix well.
  • Add kadhai masala and saunf powder. Cook for 5 minutes at medium flame.
  • Put 1 cup of water and cook. Also, add the fried onions and capsicums.
  • Cook for 5 minutes. Check with the gravy consistency.
  • At the end, put the fried paneer and cover it with a lid.
  • Yummy Kadhai Paneer is ready.


Serve it with Butter Naan !!

Butter Nan - Home made



Home made Naan from my North Indian Thali!



Ingredients for Naan:

  • Refined flour (maida) - 2 cups
  • Curd - 3 tbsp
  • Baking powder, a pinch
  • Butter
  • Coriander leaves, chopped
  • Salt, as per taste
  • Water, as required
Let's follow the steps:
  • Take a bowl, sift flour, salt and baking soda.
  • Add curd and mix well. 
  • Start kneading dough by add water as required. 
  • Make a soft dough and apply oil on the dough.
  • Cover it with a cloth and keep it for 10 minutes.
  • Divide the dough in equal amount and make balls.
  • With a rolling pin, make rotis, naan shaped.
  • Now, put coriander and press it on the top of roti.
  • Turn the roti, and on the edges (outer side) of the roti, apply water so that it sticks to the hot pan.
  • Heat pan, and put the roti (on the side where you have apply the water). Turn the pan, upside down so that upper portion of the roti gets cooked directly by the flame.
  • It will give naan a tandoor made touch.
  • Note: First cook the upper portion of the roti by turning the pan upside down. If you don't do so, then the roti which is stuck on the pan, will come out and you will not be able to turn the pan upside down as roti will fall.
  • Don't put the flame high, keep it medium.
  • Once naan is cooked, apply butter on the top.
  • Your butter naan is ready.

Serve it hot with Dal makhni!

Dal Makhni



Hello Friends!!

After a long time, I got some time out for you all. :)
So today's recipe is from my North Indian Thali - Dal Makhni, which is very mouth melting and tasty. I would not say that it's healthy, because it has lots of butter, which makes it delicious. But once in a while, one should have buttery and tasty dish.. So let's start with the steps:



Ingredients for Dal Makhni:


  • Black gram (whole urad dal) - 200 gm
  • Bay leaf - 1
  • Black Cardamom (badi ilaichi) - 2
  • Cloves - 3
  • Black pepper - 3 to 4
  • Cinnamon (dal chini) - 1 inch
  • Ginger - garlic paste - 2 tbsp
  • Onions - 1, chopped
  • Tomato - 1 cup, puree
  • Onion - 1, paste
  • Turmeric - 1/2 tsp
  • Chilli powder - 1 tsp
  • Butter - 4 tbsp
  • Garam Masala - 3 tsp
  • Cumin powder (jeera) - 1 tsp
  • Coriander powder (Dhania) - 1 tsp
  • Coriander leaves, chopped
  • Cream
  • Water, as required
  • Salt, as per taste

Let's follow the steps:




  • Soak black gram overnight in 3 cups of water. Soak it atleast for 7 - 8 hours.
  • Then wash it with rubbing the gram with hands, it will bring the red color nicely.
  • Once done, put black cardamom, cloves, black pepper, bay leaf, salt and gram in cooker. Add 5 cups of water or as required. At least wait for 10 - 15 whistle. Then cook it in a low flame. (Remember dal should be very soft).
  •  Take a kadhai(wok), heat oil and also put 2 tbsp of butter. Add cinnamon stick, ginger - garlic paste. Add chopped onion and paste. Fry till it turns golden. Then add tomato puree, coriander powder, cumin powder, chilli powder, turmeric powder. Fry for 5 minutes.
  • Now add the boiled black gram. Cook at low flame. Also, add more butter.
  • Add more water as required, and bring it to a boil. Add garam masala and mix.
  • Once done, put off the flame and add cream & butter as required.
  • Garnish with coriander leaves.

Veg Cheese Momos



Hello Friends!

Hope you all are doing good and eating healthy.

So, let's start with my next recipe which is a healthy starter we all love!



Ingredients for Veg Cheese Momo:


  • Onion - 2, finely chopped
  • Garlic - 4 cloves, finely chopped
  • Ginger - 1/2 inch, finely chopped
  • Cabbage - 1 bowl, finely chopped
  • Carrot - 1/2 bowl, grated
  • Cheese slices or cubes, as required
  • Salt, as per taste
  • Black pepper, crushed
  • Red chilli powder - 1 tsp
  • Butter - 2 tbsp
  • Flour/Maida - 2 cups
  • Oil - 2 tsp
  • Water, as required
For Sauce:

  • Tomato Ketchup - 4 tbsp
  • Tabasco Sauce - 2 tbsp
  • Ginger - 1 tsp, finely chopped
  • Garlic - 1 tsp. finely chopped
  • Onion - 1/2, finely chopped
  • Oil
  • Water - 1 to 1.5 cup


Let's follow the steps:

  • Take flour in a bowl and add salt, oil. Mix well. 
  • Keep adding water in small portions and knead a soft dough. (Knead the dough atleast for 10 minutes).
  • Cover it with a wet cloth and keep it aside.
  • Now heat a pan and put butter. Add ginger, garlic followed with onions. Cook the onions till it turns pink. Add cabbage and carrot. Saute all the vegetables.
  • Sprinkle crushed black pepper, chilli powder and salt. Mix well.
  • Once ready, take out the filling in a bowl and let it cool.
  • Now with the help of rolling pin (belan), take small portions of dough and roll it into small, round and thin.
  • Put the filling and cheese cube in the centre (as shown in the picture). And start making plates of the round rolled dough. 
  • And press all the plates together.
  • Brush oil on the Momos and in the bowl to place the Momos for steam.
  • Pour 1.5 cup of water in cooker and place a stand in the centre of cooker.
  • Heat the water and place the bowl with Momos on the stand.
  • Steam the Momos without whistle on the cooker for 15 minutes on low flame.
For Sauce:



  • Heat some oil/butter in the pan and cook garlic, ginger and onions.
  • Mix ketchup, Tabasco sauce and water in a cup and pour it in the pan.
  • Let it cook and bring it to boil. Keep the flame medium and cook it till it reaches the consistency you want.
  • Sauce is ready.


Serve it Hot !!

Baingan (Brinjal) Bharwa



Baingan ka bharwa with peanuts is a must try dish. So let's start.



Ingredients for Baingan ka Bharwa:


  • Small brinjals (baingan) - 6
  • Peanuts - 1 bowl
  • Onions - 1 bowl, chopped
  • Ginger - chopped
  • Aamchur powder - 1 tsp
  • Chilli powder - 2 tsp
  • Cumin powder - 2 tsp
  • Roasted cumin seeds- crushed
  • Turmeric powder - 1 tsp
  • Coriander powder - 2 tsp
  • Sugar - 2 tsp
  • Salt, as per taste
  • Oil
  • Water
  • Coriander leaves

Let's follow the steps:


  • Wash the brinjals and cut it from the centre. Do not cut the brinjal into half.
  • Roast peanuts in a flat pan till it turns brown. Let the peanuts cool down.
  • Remove the skin of the peanuts and grind the peanuts roughly in a mixer.

  • Heat oil in a hot pan. Add ginger, roasted cumin seeds and onions. Fry till onions turns soft.
  • Add peanuts and all spices, salt and mix well. Add the sugar.
  • Once bharwa is done, take it off the flame.
  • Now stuff the brinjals with the peanut masala.
  • Heat some oil in pan, put the stuffed brinjals and also put the remaining masala.
  • Cook the brinjals. Add 1 cup of water and cook well till brinjals are soft and nicely done.
  • Garnish it with coriander leaves.
  • Serve hot with roti/rice.
